Chef Tamaru began his career at 17 in Japan when he apprenticed at his first French restaurant, Champ de Mars, in Tokyo. In 1990, Chef relocated to Canada and after working under several renowned Chefs like Jamie Kennedy and Didier Leroy, he made a name for himself as one of Toronto’s top French Chefs. He has been celebrated by the Toronto press since the early 2000s and in 2006, while creating some of Toronto’s top tasting menus of the time at JOV Bistro, he was named “Chef of North Toronto” by respected culinary reviewer Joanne Kates. With numerous notable restaurants under his belt, Chef Tamaru continues to be passionate about cooking classic French dishes with his famous ever delicate Japanese hints. He is excited about being a part of this Annex community.

ManagerCarolina Avaria

After an 18-year Professional Stage Manager career, Carolina studied hospitality and became a professional Hotel Concierge. Her passion for guest service quickly propelled her to the posts of Chef Concierge, first, for InterContinental Hotels (where she met Chef Masayuki) and finally to Four Seasons Hotel Toronto. Carolina is recognized by 5-Star Hotel Concierges worldwide, as she represented Les Clefs d’Or Canada, (a global association considered to be the pinnacle of Guest Service) as President, for 5 years. She is often invited to publicly speak on the topic of Service and recently concluded teaching Service Excellence and Professionalism, at Centennial College.
